Why This Stage of the Growing Season Matters for Every Bottle of Wine
If you visit Natalie’s Estate Winery in late July or early August, you may notice an exciting transformation taking place throughout the vineyard. Clusters of grapes that were once firm and bright green begin to soften and change color. This beautiful transition is called veraison, and it marks one of the most important milestones in the annual vineyard growing season.
While veraison is stunning to see, it is much more than a visual change. It signals the beginning of the grapes’ final journey toward ripeness and ultimately determines the balance, flavor, and quality of every wine we produce.
What Is Veraison?
Veraison is the stage when wine grapes begin to ripen. Red grape varieties gradually change from green to shades of red, purple, and deep blue, while white grape varieties become more translucent and develop golden hues.
During this period, the berries also begin to soften as they accumulate sugars and lose some of their natural acidity. These changes are driven by the vine as it shifts its energy away from shoot growth and into fruit development.
For our winemaking team, veraison is an exciting reminder that harvest is drawing closer—but there is still plenty of work to be done.

The Science Behind Ripening
As the grapes move through veraison, several important changes occur simultaneously:
- Sugar levels increase as the vines move carbohydrates into the fruit.
- Natural acids slowly decline, helping create balance in the finished wine.
- Flavor compounds begin to develop, creating the aromas and taste characteristics unique to each grape variety.
- Tannins mature, becoming softer and more refined.
- Color pigments continue to deepen, especially in red wine grapes.
These changes happen gradually over several weeks, and each vineyard block progresses at its own pace depending on the variety, sun exposure, and weather conditions.
Watching Every Vine Carefully
At Natalie’s Estate Winery, we believe exceptional wines begin with careful attention in the vineyard.
Throughout veraison, we regularly walk the rows, observing how each block is progressing. Rather than relying on a calendar alone, we evaluate the fruit by taste, appearance, and laboratory analysis.
Every vineyard develops differently, and every vintage presents unique conditions. Careful monitoring allows us to determine when each block reaches its ideal balance of sugar, acidity, and flavor development.
This thoughtful approach helps ensure every grape is harvested at the right moment.

Supporting Healthy Fruit Naturally
Even as the fruit ripens, the vineyard continues to require careful stewardship.
Our vineyard practices are guided by our commitment to regenerative farming and working in harmony with nature. We perform nearly all vineyard work by hand, allowing us to give each vine individual attention throughout the growing season.
We also maintain approximately half of our property as uncultivated natural habitat, encouraging biodiversity and creating a healthier vineyard ecosystem. Bluebird houses throughout the vineyard provide natural pest control by inviting insect-eating birds to make the vineyard their home.
Our vineyard nutrition program supports healthy vine development using carefully selected natural products rather than harsh chemicals. We believe that the happier and healthier the vines are, the better the wine will be. Patience Leads to Better Wine
Although veraison marks the beginning of ripening, harvest is still weeks away.
One of the greatest challenges in winemaking is resisting the temptation to pick fruit too early. Beautiful color alone does not indicate that grapes are fully ripe. True ripeness requires balance between sugar, acidity, tannin maturity, and flavor development.
We continue sampling grapes throughout August and into early fall, carefully tracking the fruit as it moves toward its ideal harvest window.
That patience is rewarded in the glass with wines that show greater complexity, structure, and balance.
