Harvest is one of the most exciting times of year at Natalie’s Estate Winery. After months of pruning, budbreak, flowering, fruit set, veraison, and careful vineyard management, the grapes have finally reached the moment we’ve been working toward.

But picking the grapes isn’t the end of the story. In many ways, it’s when the next chapter begins.

Once the fruit leaves the vineyard and arrives at the winery, the focus shifts from growing grapes to transforming them into wine. For a small, family-owned boutique winery in Oregon, this hands-on process involves key decisions that ultimately shape each bottle’s character.

It Starts with the Grapes

Great wine begins in the vineyard, so deciding exactly when to harvest matters. Ripeness isn’t determined by the calendar alone. Boyd and our winemaking team evaluate the fruit by assessing sugar levels, acidity, flavor development, tannins, and the grapes’ condition.

Different grape varieties and vineyard sites also ripen on their own schedules. That means harvest can unfold over several weeks as each block reaches the right balance.

Once picked, the grapes go to the winery, where the transformation begins.

Sorting and Preparing the Fruit

One of the first steps is sorting the grapes. This gives the winemaking team another opportunity to evaluate the fruit and remove anything that doesn’t meet our standards.

Depending on the wine, the team may then destem and gently crush the grapes before moving them into fermentation vessels. Every decision matters. With small-lot winemaking, the process can be adapted to the individual characteristics of the grapes rather than taking a one-size-fits-all approach.

That attention to detail is part of what makes handcrafted wines so distinctive.

Fermentation: Where Grapes Become Wine

Fermentation is one of the most fascinating stages of winemaking in Oregon. Yeast converts the natural sugars in the grapes into alcohol, but there is much more happening inside the fermentation vessel.

Color, aromas, flavors, and tannins develop and are extracted from the grape skins. The winemaking team carefully monitors the wine throughout this process, paying attention to temperature, flavor, and fermentation progress.

For red wines, managing contact between the juice and skins is especially important. Gentle punch-downs and other techniques help integrate the skin and juice, shaping the wine’s final structure, color, and character.

From Fermentation to the Barrel

Once fermentation is complete, we separate the wine from the skins and solids and may gently press it. From there, many of our red wines begin another important stage of their journey: barrel aging.

Barrels do much more than simply hold wine. Over time, they can soften tannins, develop texture, and add complexity while letting the wine’s fruit and other characteristics evolve.

For a winery known for bold red wines, this stage requires patience. Cabernet Sauvignon, Merlot, Syrah, Zinfandel, Sangiovese, and other reds each develop differently. The winemaking team regularly tastes and evaluates the wines as they mature.

The Advantage of Small-Lot Winemaking

At Natalie’s Estate, we produce our wines in small quantities. This allows us to stay closely connected to each wine throughout its journey from vineyard to bottle.

Rather than rushing, we taste, evaluate, and make decisions based on what each wine needs. That philosophy is central to our approach as a family-owned Oregon winery.

Harvest may be the most visible part of the winemaking year, but what happens afterward matters just as much. In the cellar, the new vintage slowly begins to reveal itself—and that is part of the magic of winemaking.
